Homemade with the Beekeeper’s Wife: Happy Birthday Baby Panda!

Aaaaaand, here it is! Remember the dragon suit RR got for his birthday? Well look what turned up for the Beebee’s birthday!!
I just about had a cute implosion when I saw this on her. It caught me unawares as it looked so big I didn’t think it would fit, then I turned around and there she was, in all her snugglable lovable redonkulous baby panda glory. Epic Win Aunty Pu!
And… here’s a little pic of the three 1 year olds at their party, sitting on the mushrooms the beekeeper made.
We were at Nonna and Pop’s in Gisborne for the Beeb’s actual birthday, and we were overflowing with feijoas. I have made FOUR of these cakes in the last couple of weeks. It is SO good, and so easy, do try it! I made a lime icing instead of lemon which I think made it extra delicious!
Feijoa Cake
In a food processor, combine:
1 cup mashed feijoas (slightly more if you like)
2 eggs
1 ¼ cups sugar
1 tsp vanilla essence
½ cup milk
75g melted butter
Add to:
2 cups flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
Fold to just combine. Bake in a moderate oven til a skewer comes out clean. Ice with lemon icing –
25g butter, zest and some juice of lemon, 2 cups icing sugar.
